    Whole Wheat Apple Cinnamon Cake

Ingredients

  • Apple Mixture
  • 1 Tbsp. Organic Butter
  • 2 Large Apples
  • 2 Tbsp. Coconut Sugar
  • 1 Tsp. Cinnamon
  • 1/8 Tsp. Salt
  • Main Cake Ingredients
  • 3/4 Cup Isis Biodynamic┬« Whole Wheat Flour
  • 1/4 Cup Spelt Flour
  • 1 Cup Almond Meal
  • 1/4 Cup Corn Meal
  • 1 & 1/4 Tsp. Baking Soda
  • 1 Tsp. Salt
  • 1 Stick Unsalted Organic Butter
  • 1/2 Cup Buttermilk
  • 1 Cup Coconut Sugar
  • 1 Tbsp. Vanilla Extract

Instructions

Apple Mixture
  1. Heat 1 Tbsp. of butter in a saute pan over medium high heat.
  2. Add the apples, sugar, cinnamon and salt. Cook until tender (3-4 min).
  3. Set Aside.
Cake
  1. Heat the oven to 350 degrees. Grease a 9" cake pan.
  2. In a bowl, mix the whole wheat flour, spelt flour, almond meal, corn meal, baking powder and salt.
  3. In another bowl, beat the butter until soft and fluffy (2-3 min). Add the sugar and continue to mix for 4-6 minutes. Slowly beat in the eggs, one at a time, followed by the buttermilk and vanilla.
  4. Mix the dry ingredients into the wet, until just combined. Do not over mix. Fold in the cooked apples and pour the batter into your greased pan.
  5. Sprinkle the top with coconut sugar and bake roughly 1 hour or until a toothpick inserted in the center comes out clean.

Recipe notes

Serve with coconut ice cream or organic whipped cream :)
