Instructions
Apple Mixture
- Heat 1 Tbsp. of butter in a saute pan over medium high heat.
- Add the apples, sugar, cinnamon and salt.
Cook until tender (3-4 min).
- Set Aside.
Cake
- Heat the oven to 350 degrees. Grease a 9" cake pan.
- In a bowl, mix the whole wheat flour, spelt flour, almond meal, corn meal, baking powder and salt.
- In another bowl, beat the butter until soft and fluffy (2-3 min). Add the sugar and continue to mix for 4-6 minutes. Slowly beat in the eggs, one at a time, followed by the buttermilk and vanilla.
- Mix the dry ingredients into the wet, until just combined. Do not over mix. Fold in the cooked apples and pour the batter into your greased pan.
- Sprinkle the top with coconut sugar and bake roughly 1 hour or until a toothpick inserted in the center comes out clean.
