    Superfood Pancakes
  • The ultimate Super-food pancake! For those who like to get adventurous with breakfast. This recipe is vegan approved.

Ingredients

  • 1 Cup Isis Biodynamic® Whole Wheat Flour
  • 2 Teaspoon Baking Powder
  • 2 Teaspoon Cacao Nibs
  • 3/4 Teaspoon Cinnamon
  • 1/2 Teaspoon Vanilla Extract
  • 2 Teaspoon Honey Organic
  • 3/4 Teaspoon Salt Himilayan
  • 1 Cup Almond Milk
  • 1/4 Cup Chia Gel The equivalent of 2 eggs worth (this is what binds the batter together; use best judgement)
  • 2 Tablespoons Chopped Walnuts Optional

Instructions

Main Instructions
  1. Heat Skillet to 400 degrees.
  2. Mix all ingredients into large bowl in the order listed. The consistency should be thick.
  3. Pour pancakes onto heated skillet. They shouldn't stick but it's chef's choice to grease the skillet.
  4. Cook until top bubbles, then flip to other side.
  5. When pancakes are fully cooked through remove from heat and top with Biodynamic berries.
Chia Gel
  1. Mix two cups of water with 4 tablespoons chia seeds.
  2. Let stand for 15 minutes.
  3. Mix again, then let stand for 15 minutes. The seeds will start to absorb the water and become a gel consistency.
  4. This makes 2 and 1/4 cups chia gel that will last for 1 week when refrigerated.

Recipe notes

When making the chia gel:  instead of soaking the seeds in water you can experiment with soaking them in almond milk and organic berry juice for different flavors.  Get creative!
