    Pumpkin Gingerbread

Ingredients

  • 2.5 Cup Isis Biodynamic┬« Whole Wheat Flour
  • 1 Cup Spelt Flour
  • 2 Tsp Ginger
  • .5 Tsp Nutmeg
  • 1 Tsp Cinnamon
  • 1 Tsp Cloves
  • 2 Tsp Baking Soda
  • .5 Tsp Baking Powder
  • 1.5 Tsp Salt
  • 4 Eggs
  • 1 Cup Coconut Oil
  • 2/3 Cup Water
  • 1 Cup Pureed Cooked Pumpkin
  • 1.5 Cup Sugar

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a bowl, whisk together both of the flours, ginger, nutmeg, cinnamon, cloves, baking soda, baking powder and salt.
  3. In a separate bowl, mix the eggs, coconut oil, water, pumpkin puree and sugar.
  4. Combine the dry ingredients with the wet ingredients and mix until just combined.
  5. Bake for 45 minutes to 1 hour or until a toothpick in the center comes out clean.
  6. Enjoy!
