    Planetary Pizza Dough
  • Amazing Whole-Wheat Pizza Dough Recipe
1 Pizza Pie

  • 1/2 Cup + 2 Tbsp Sparkling Water
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 Tsp Honey
  • 1 Tsp Molasses
  • 1.5 Tsp Dry Active Yeast
  • 1/2 Tsp Sea Salt
  • 1.5 Cups Isis Biodynamic® Whole Wheat Flour
  • 1/2 Cup Spelt or Amaranth Flour

  1. In a large bowl or stand mixer, add the water, oil, honey, molasses and yeast. Stir to combine and let sit for 15 minutes.
  2. Add the Whole-Wheat flour, Spelt Flour and Salt to the bowl and mix until a tacky dough forms.
  3. Continue to mix for 4-5 minutes to allow the gluten to develop.
  4. Set aside for 1 hour for the dough to rise. Once done, punch down the dough carefully to release the air. Let sit again for 1 hour to rise. When risen dough should look like this photo.
  5. Preheat your oven to 450 degrees with a baking stone set in the middle of your oven. The dough should be risen to look like photo.
  6. Divide the dough into 2 equal pieces and roll out to your desired shape. Top with sauce and toppings of choice.
  7. Bake for 10-12 minutes until crispy and slightly browned.

Recipe notes

If you are looking for a thin crust, then roll the dough out as thin as you can.  This dough also works very well for a deep dish pizza if desired.
