    Dynamic Bread Pudding (Caramel Banana)

  • 1/2 Stick Organic Butter
  • 1 Cup Coconut Palm Sugar or Organic Brown Sugar
  • 1 Cup Coconut Milk
  • 1 Tsp Vanilla
  • 1 Pinch Sea Salt
  • 1 Banana Peeled and Chopped
  • 1 Peach Peeled Pitted and Diced (optional)

  1. Preheat your oven to 350 degrees.
  2. In a pot over medium heat, melt the butter. Add the Sugar and stir to dissolve.
  3. Add the coconut milk, vanilla and pinch of salt.
  4. Bring to a boil, stirring frequently. Once the caramel sauce has reached a steady boil, take off heat and let cool.
  5. In a bowl toss the bread with the banana and diced peaches.
  6. Whisk the eggs into the caramel sauce to form a custard. Pour over the bread and place in a small casserole dish. Let this mixture soak for roughly 30-45 minutes before baking.
  7. Once soaked, place the casserole dish in the oven and bake until set, 30-40 minutes. If you prefer a crispy top, then set under the broiler for 2-3 minutes.
