    Cherry Pie

1 Pie


  • Filling
  • 5-6 Cup Fresh Pitted Cherries (Can use frozen if necesarry)
  • 2 Tbsp. Lemon Juice
  • 1/3 Cup Coconut Sugar
  • 1/3 Cup Sugar
  • 1/2 Tsp. Almond Extract (Can add more to taste)
  • 2 Tbsp. Organic Corn Starch
  • 1 Tbsp. Organic Butter Cubed
  • Whole Wheat Oat Crust
  • 1.5 Cup Isis Biodynamic┬« Whole Wheat Flour
  • 1 Cup Oats Finely Ground
  • 1 Tbsp. Coconut Sugar
  • 1 Tsp. Sea Salt
  • 2/3 Cup Organic Butter Cold
  • 1/4 Cup Ice Cold Water More as needed


Whole Wheat Oat Crust
  1. Place flour, oats, sugar, and salt in a bowl.
  2. Cut in the butter until the pieces are the size of a pea.
  3. Stir the water into the mixture until a ball forms. (add more water as necessary).
  4. Divide the dough in half and wrap in plastic. Place in the refrigerator for at least 2 hours to chill.
  5. When done, on a floured surface roll each dough ball to an 11' round circle.
Filling and Pie
  1. Preheat the oven to 425 degrees.
  2. In a bowl, mix all of the filling ingredients together except the butter. Set aside.
  3. Place one of the pie crusts in your dish and top with the filling.
  4. Sprinkle cubed butter on top.
  5. Cover with the second crust and pinch around the edges to seal. Make a couple of slits in the top to allow the steam to vent.
  6. Brush the top crust with melted butter and bake for roughly 40-50 minutes.
  7. Enjoy!
